Most phones from iPhone XS / XR (2018) onward, plus recent Samsung Galaxy, Google Pixel and many other models, support eSIM. Open Settings and look for 'Add eSIM'. Your phone must also be carrier-unlocked.

Validity begins when the eSIM first connects to a network at your destination, not when you buy or install it. Installing at home over Wi-Fi uses no data, so you can set everything up before you fly.

Go to Settings → Cellular/Mobile Data → Add eSIM, then scan the QR code or install directly from the SimFuse app. Label it 'Travel' and set it as your data line. Do this on Wi-Fi before you leave home.
